THE ROCKS Chroma Dinner at Mode Kitchen, Four Seasons The Rocks has created a sensory menu of sight, sound and smell! Before each course, diners are given a menu of the coming dish complete with a scent that evokes a sense of expectation. The lights fade to black as light projections on the ceilings and walls set the tone of what’s to come. Primary colors in keeping with the Vivid Sydney season theme the menu and experience. Tickets are $150 per head including matching cocktails with each of the 4 dishes.
Green Course:
Hiramasa Kingfish, aboriginal green ants, chlorophyll and stracciatella
Blue Course:
Spanner Crab risotto, purple cabbage and scampi caviar
Red Course:
Ruby snapper, smoked strawberry, gazpacho, radish
Sweet Canvas:
White chocolate, vanilla & mandarin sphere, blueberry, raspberry, pistachio

The Ternary descended into darkness with customers dining by nothing more than candlelight with the first of the trio of dinners, Unlit by The Ternary. A six course degustation menu that consisted of decadent dishes paired with matching wines throughout the evening on Thursday the 23rd of May.
Planar promised and deliver bar theatrics really setting a high standard as we see many of our favorite dining destinations unleash abstract creativity from their kitchens! As you can see in the above video, harbourside’s theme of projections and lighting of ‘Robot SPACELand electro-automotive super-bots’ is brought to life at Planar’s bar ($25) in the form of their official Vivid Sydney cocktail, SPACELand Sphere (Vodka, Rum, Gin, Peach Liquor, Blue Curaçao, Grenadine & Lemon Juice).
