This homestyle carrot and walnut cake with cream cheese frosting is an easy recipe that is sure to become a family favourite. Double the recipe to make an impressive celebration cake.
INGREDIENTS:
Cake
- 300g carrot, chopped
- 3 eggs
- 180g (1 cup) rice bran oil
- 120g brown sugar
- 1 tsp vanilla extract
- 250g plain flour
- 1 tsp baking powder
- 1 tsp bicarb soda
- 2 tsp cinnamon
- ½ tsp ground cardamom
- ½ tsp ground ginger
- 100g walnuts, chopped
Cream Cheese Frosting
- 250g cream cheese
- 125g butter
- 600g icing sugar
METHOD:
Preheat oven to 170°C / 338°F. Line and grease two round 20cm (8 inch) cake tins and set aside.
Thermomix Method:
Place carrot in TM bowl and chop 20 sec/speed 8. Cook 2 min/100°C/speed 3. Set aside.
- Without washing the bowl, add eggs, oil, sugar and vanilla and blend 20 sec/speed 5. Add flour, baking powder, bicarb soda and spices and mix 20 sec/speed 5. Add carrot and walnuts and mix 20 sec/reverse/speed 4.
- Divide cake mixture evenly between the two cake tins and bake in oven for 25 minutes, or until cooked through when tested with a skewer.
- Cool the cake in the tin for 10 minutes before before turning out onto a wire rack to cool completely.
- Cream cheese frosting: Chop butter and cream cheese into cubes. Place all ingredients into the TM bowl and blend for 20 sec/speed 5, or until smooth. Once the cake has cooled, spread half the frosting on the bottom layer before adding the top layer and topping with the remaining cream cheese frosting.
Conventional Method:
- Grate carrots and set aside.
- In a large mixing bowl, beat together eggs, oil, sugar and vanilla, until well combined. Add flour, baking powder, bicarb soda and spices and stir until just combined. Do not over mix. Add carrot and walnuts and fold through until combined.
- Divide cake mixture evenly between the two cake tins and bake in oven for 25 minutes, or until cooked through when tested with a skewer.
- Cool the cake in the tin for 10 minutes before before turning out onto a wire rack to cool completely.
- Cream cheese frosting: Chop butter and cream cheese into cubes. Place butter and icing sugar into a bowl and beat until fluffy. Add cream cheese and beat until smooth. Once the cake has cooled, spread half the frosting on the bottom layer before adding the top layer and topping with the remaining cream cheese frosting.
