The anticipation of Fortitude Valley’s new establishment opening next month, Oche straight from the city of northern lights is killing us.   The pub and dining experience will showcase local brews, revitalised old school socialising (yep that’s right, put your phones down), darts with a vision of eco-sustainability.

The launch menu and culinary blueprint has been devised by chef consultant and former Head Chef of Gerard’s Bistro, the food whisperer Ben Williamson, with Chef Swapp now part of the team.  A quick scan of his socials shows the promise of stellar creativity just waiting to be unleashed come open day!

 Swapp boasts an enviable track record. Most recently he worked with celebrated chef Ben O’Donoghue at West End’s Billycart, and prior to that with Brisbane food icon Philip Johnson at E’cco Bistro at Newstead as interim Head Chef, at the award-winning Jellyfish, and he led a team of 14+ chefs for four years at the hatted Spirit House on the Sunshine Coast.

Prior to this, he was Stagier at the 1 Michelin-starred restaurant Bo.Lan in Bangkok, opened Chop Chop Changs with consultant Paul Bain and was Sous Chef at Maze and Maze grill by Gordon Ramsey. He also led the team at the wood-fired specialist restaurant, Pony Dining.

At Oche Fortitude Valley, guests are invited to put down their phones and share 85 action-packed minutes playing darts with their squad, fuelled by a range of share menus crafted and sourced locally, and designed of course to be eaten with that one free hand!

Cocktails paying tribute to Brisbane are officially paired with the menu, sitting alongside a considerable premium gin and wine list.  All this, as well as a stunningly designed outdoor terrace and two dedicated bars – one being a seasonal sipper showcasing local brews – designed to welcome 360 customers!
