It’s business as usual for this (in normal times) single stooled hole in the wall establishment.  The full menu was still available at the time, but it’s the variation in sides we’re using today to create a meal….

An appropriate selection in light of recent academic commentary on the current situation.  Chicken Karaage rose to fame in post World War 2 Japan as a result of the food shortage communities endured.  Unlike tempura, the meat is seasoned prior to cooking.

What’s great about gyoza in comparison to dough based dim sim or yum cha dishes nearby is the the thin casing made from wheat flour that allow the fillings to be more pronounced.   This is another World War II dish adapted and adopted by returning soldiers who took refuge in China.

Derived from the line of French croquettes, the Japanese version is more burger patty shaped.  Whole prawns are found in the luscious centres of these potato based outer crumbed cakes.
