The Robin Hood Hotel’s facelift and re-purposing of existing space involved substantial excavation converting the basement structure into a fully functional commercial kitchen. The former Level 1 accommodation area of twenty rooms is now an indoor/outdoor dining bistro. Its execution is a feat on its own with the entire site being situated on one of Waverley’s most busiest roads.
Through the Whiskey day events, Chef Clement Marchais who curates the French inspired menu in the upper level bistro, is able to show a different side to his culinary repertoire with his interpretation of the modern day pub grub loved in the east.
